On Tuesday, Joe Davidson from Oklahoma Joe's joined News On 6 at Noon and shared how to make his Smoked Chicken.


Ingredients

  • 2 Whole Chicken
  • 4 oz. Joe’s Pork and Poultry Rub
  • 8 oz. Joe’s BBQ Sauce

Instructions

  1. Step 1: Fire up your Oklahoma Joe Grill/Smoker with Charcoal
  2. Step 2: Make sure to build the fire to one side of the grill, or in the firebox so that you cook with indirect heat
  3. Step 3: Sprinkle Joe’s Hog Rub and Yard Bird Seasoning liberally all over chicken halves
  4. Step 4: Once charcoal is ready to cook on, add a few mesquite wood chunks to the fire
  5. Step 5: Place chickens onto grill/smoker that is at a temperature around 275 F (If you have built your fire in the grill/smoker, then group the chickens away from the coal bed and near the smoke stack.)
  6. Step 6: Every 30 minutes turn chicken. Add charcoal and wood as needed to maintain cooking temperature.
  7. Step 7: Preheat the sauce on grill
  8. Step 8: After chickens have been on smoker for 1 ½ hour start to baste the chicken halves with sauce. Continue to baste and cook chickens until they reach an internal temperature of 160 degrees against the bone.
  9. Step 9: If your chickens are getting to dark wrap in foil until they reach 160 degrees against the bone.
  10. Step 10: Once you reach 160 degrees remove chickens from the smoker and serve with your favorite side dishes.
