Ingredients

  • 3 oz. 72% cacao chocolate (or any dark chocolate with high cacao content)
  • 1 container (15 oz.) whole milk ricotta cheese (can substitute with skim or low-fat for fewer calories)
  • 1/4 cup half-and-half
  • Fresh strawberries

Instructions

  1. Step 1: Place the 72% cacao chocolate in a microwave-safe bowl. Heat in short bursts, stirring between each, until completely melted.
  2. Step 2: In a blender or food processor, combine the melted chocolate and ricotta cheese. Blend until smooth.
  3. Step 3: Add half-and-half a little at a time until you reach a creamy, mousse-like consistency. The mixture should be thick but smooth enough to spoon easily.
  4. Step 4: Spoon the mousse into serving dishes and chill in the refrigerator for at least 1 hour to allow it to firm up.
  5. Step 5: Top with fresh strawberries before serving. Optionally, drizzle with extra dark chocolate or a sprinkle of cacao powder for extra flair.
