Description

We're happy to welcome back Devin Levine with the Arvest Convention Center doing Spanish Coddled Eggs


Ingredients

  • 4 Eggs
  • 1 tabl Butter, softened
  • 4 oz Chorizo, cooked
  • 2 tabl Diced Red Pepper
  • 2 tabl Scallions, minced
  • 2 tabl Manchego, grated
  • 2 tabl Heavy cream
  • Salt, pepper to taste
  • Toast Points

Instructions

  1. Step 1: Butter two ramekins or small cups; portion the chorizo, red peppers & scallions in the bottom of the cups; crack two eggs into each cup.
  2. Step 2: Drizzle the heavy cream on top, sprinkle grated Manchego and season with salt & pepper.
  3. Step 3: Please in bain-marie with water coming up halfway to the cup.
  4. Step 4: Cover and place over the medium. Heat and lightly steam for 10-15 minutes or until the eggs are slightly firm. Remove and serve with buttered toast points.
