Black Bean Raspberry Chipotle Dip

We’re happy to welcome back Kelsey Blubaugh with Montereau showing us how to make a Black Bean Raspberry Chipotle Dip


Ingredients

  • 1 tablespoon butter
  • 1/4 cup chopped onion
  • 2 cans black beans
  • 1/2 tsp. kosher salt
  • 1/2 tsp. ground cumin
  • 1 block, 8-ozs. cream cheese
  • 1/2 cup raspberry chipotle sauce
  • 1/2 cup pepper jack cheese, shredded
  • 1 bag tortilla chips

Instructions

  1. Step 1: Melt butter in small pot. Add chopped onion and sauté until brown. Remove from heat and place the onion in a bowl to cool.
  2. Step 2: Dump the can of black beans into the pot. Add the salt and cumin. Stir over medium heat, mashing the beans as it cooks. Cook for about 10 minutes, until the liquid reduces and the beans have a smooth, yet chunky consistency. Remove from heat.
  3. Step 3: Add the cream cheese to the bowl of onions and stir to combine.
  4. Step 4: Place the cream cheese in the center of an oven-safe dish.
  5. Step 5: Spoon the beans around the cream cheese.
  6. Step 6: Spoon a well into the center of the cream cheese. Pour the raspberry chipotle sauce into the well.
  7. Step 7: Add pepper jack cheese on top.
  8. Step 8: Place in a 450-degree oven, until the cheese melts, and serve with tortilla chips.
