  • 4 cups shredded carrots
  • 1 Honeycrisp or Gala apple, cut into matchsticks
  • 1/4 cup mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon fresh lemon juice (plus 1 teaspoon for apples)
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/3 cup golden raisins
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped toasted pecans (optional)

Instructions

  1. Step 1: Shred the carrots.
  2. Step 2: Cut the apple into matchsticks (leave the skin on for color and texture). Toss the apple with 1 teaspoon of lemon juice to prevent browning.
