First, make your roasted garlic infused olive oil:
Fill pot a few inches high with raw garlic cloves
Add extra virgin olive oil until it covers all of the cloves
Bring the oil temperature up to 200 degrees
Control burner temp rate to continue a roughly 200 (+/- 10) degrees for 20 minutes (should be a very light brown when finished)
Then, drain olive oil (reserve for another use it's great in sauces and other dishes, but use within a few days).
Take 3 Tbps of the roasted garlic and add to a 32-oz bottle or other container with a lid.
Add fresh olive oil to the bottle to fill.
Cap, shake to mix thoroughly, and it's ready to use.
Take the rest of the roasted garlic, and make a paste from it by smashing and lightly stirring.
Once ready, prepare a pizza dough, lightly cover with roasted garlic olive oil, then spread garlic paste on top.
Add mozzarella cheese to taste, and bake in a 500 degrees Fahrenheit oven on a pre-heated stone until crust is nicely browned and cheese is melted and bubbly.
