2 zucchini, diced and roasted for 15 minutes in olive oil, salt & pepper
1 small red onion minced
Seeds of 1 pomegranate
1/2 c feta cheese crumbles
1 Tbsp lime juice
2 avocados diced!
salt and pepper to taste.
Roast your zucchini in an oven at 350 for 15 minutes and then cool. mix all your other ingredients together and serve with pita chips or crackers.
