The big game is just six days away. That's less than a week left to figure out the Super Bowl party spread. There's the classic dips and chips but if you want to go a step further you can cook something up. Kristy White with Bubba-Q-Boys is here to show us how you can make some chipotle chicken street tacos.
Ingredients
- 1 lb boneless skinless chicken thighs
- Bubba-Q-Boys Chipotle Sweet Heat seasoning
- fresh cilantro
- cojita cheese
- lime wedges
- corn or flour tortillas
- For Corn Medley - 1 onion
- 1 red pepper
- 1 orange pepper
- 1 bag of frozen whole kernel corn
- Olive oil
Instructions
- Tacos: Season chicken thighs with Bubba-Q-Boys rub. Smoke or grill chicken until cooked through. Cut up into bite-size pieces Place the tortilla in a taco stand Sprinkle each with your own toppings including Cojita cheese, fresh cilantro and lime juice
- Corn Medley: Heat pan with 2 tbs. of olive oil and 2 tbs. of butter Sauté diced up onion, red and orange peppers Cook until tender Add frozen corn Season with Bubba-Q-Boys Competition Rub Cook on medium heat for 20-30 minutes
