We're happy to welcome back Chef Devin Levine from the Cox Business Convention Center doing a Caprese Sandwich.
Ingredients
- 4 Vine Rip Tomatoes
- 1 lb of Fresh Mozzarella, sliced
- 4 oz Greek Olives, chopped
- 4 oz Spring Field Greens
- .5 ea Red Onion, rings
- .25 cup of Grated Parmesan
- Ciabatta Bread, split
- Dressing: 1 cup Mayonnaise .25 cup Balsamic Vinegar .25 Cup Grain Mustard 3 tabl Honey 1 tabl Fresh Basil, chopped Salt & Pepper to taste
Instructions
- Method: Combine all ingredients for dressing in a mixing bowl and whisk to emulsify.
- Step 2: Split ciabatta bread and spread dressing on each halve; layer tomato & mozzarella; add chopped olives & red onion rings.
- Step 3: Toss greens in a small amount of dressing and layer on top of tomatoes & mozzarella; sprinkle grated parmesan and sandwich with ciabatta on top. Cut into two halves and serve.
