A great addition to holiday meals, that you can whip up ahead of time!
Ingredients
- Turkey neck
- Sea salt & pepper
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 3 cloves of garlic
- 1 TSP of thyme
- 1/2 TSP of rosemary
- 5 cups of turkey broth
- 1/4 cup of dry white wine
- 1/2 TSP of worcestershire sauce
- 1/3 cup of cornstarch
Instructions
- Prep: Add turkey neck on an oiled pan with seasonings.
- Prep: Put chopped vegetables around the neck. Add oil and herbs
- Prep: Put pan in oven at 400 degrees for 1 hour.
- Prep: Add all of the pan ingredients into a stock pot.
- Prep: Add 5 cups of water and simmer for an hour on the stovetop.
- Prep: Take out turkey neck.
- Prep: Use blender or immersion blender to combine ingredients.
- Prep: Set aside one cup of your freshly made broth.
- Thicken: Add corn starch to the cup of broth. Stir to create a slurry.
- Thicken: Bring the remaining broth to a boil, then add your slurry mixture to the pot by slowly whisking.
- Combine: Add worcestershire sauce and wine, and mix.
- Finish: Let the mixture simmer, and add salt and pepper to taste.
- Store: Store in deli containers or mason jars. Reheat before use!
