Take Everything Bagels to the next level with these hearty, easy-to-make muffin pan bites featuring kale and sausage that will elevate your breakfast and brunch spread.
Ingredients
- 1/2 cup white onion, diced
- 2 garlic cloves, minced
- 8 oz. pork breakfast sausage, roll or bulk
- 2 oz. Panera® Everything Bagels, halved and cut into 1-inch cubes
- 6 large eggs
- 1/4 cup Half and Half
- 1/2 cup plain cream cheese
- 2 cups kale, chopped
- 1 tsp. black pepper
- 1/2 tsp. salt
Instructions
- Step 1: Preheat oven to 350°F.
- Step 2: In a large pan, sauté onions and garlic on low for 2 minutes. Add sausage and cook for an additional 5 minutes or until cooked through. Set aside.
- Step 3: In a mixing bowl, whisk eggs, half & half, and cream cheese until fully incorporated, then add the sausage mixture, bagels, kale, salt and pepper. Mix well to combine.
- Step 4: Spray muin pan with nonstick spray or grease with butter, then fill with 12 equal portions of the bagel mixture. Bake for 12-15 minutes or until top is golden brown and center is set.
