They're a new restaurant at Mother Road Market. Salt and Vinegar opened Friday and the others are graduates from the Kitchen 66 program, which helps kick-start entrepreneurs who want to start their own restaurants.
“We got ourselves a permanent spot. It’s just me and my best friend who opened it. Two women, both 30 and we’re just trying to kind of make a spot in the community that we wanted for ourselves as well," said Shelby Remy.
Remy said the vegan wontons are just one of the many specialty items you'll find on the menu.
“Our fan favorite is a salt and vinegar potato chip crusted chicken. We use the same crust on our fried pickles. We make our own pickles in-house. We make our slaw daily," said Remy.
The two graduated from Mother Road Market's Kitchen 66 program in the spring of 2020, which is designed to help future restaurant owners.
“We have sales opportunities like the take-over café right behind me. Where folks with a restaurant idea can pop up for the day, see what it’s like to run their own operation and we also have the launch class," said Rachael Reagan.
Reagan is the program director and said each class helps up to 10 aspiring entrepreneurs. She said the program is seeing a lot of success, even during the pandemic.
“It was so interesting to see people still wanting to start a food business in the middle of that. At the very beginning of it affects businesses particularly the food industry. We had no idea how our food entrepreneurs were going to feel," said Reagan.
Remy said the long-term goal is to open up a second location in South Tulsa.
