Italian Chocolate Pizzelle
3 large eggs
1 cup sugar
1 teaspoon vanilla
2 cups all purpose flour
1/4 cup cocoa powder
2 1/2 teaspoon baking powder
Pinch of salt
In a mixing bowl use an electric hand mixer to beat together the eggs and sugar for two minutes.
Gently stir in the vanilla.
In another bowl whisk together all of the dry ingredients.
Alternate adding a half a cup of the dry ingredients along with half of the melted butter while mixing it together continue until all of the butter and dried ingredients are in the sugar mixture and a thick batter will form.
Heat up your puzzle iron according to manufacture instructions and spray well with nonstick cooking spray.
To make it easier to add the batter to the iron I’ll place it in a plastic piping bag and snip the end.
Squeeze about a tablespoon of batter into the center of your hot puzzlemaker and press down allow the cookies to cook for 10 to 15 seconds open up the iron and place the cookies on a cooling rack.
Allow the cookies to cool before trimming the edges.
To decorate dip in melted chocolate and add sprinkles.
