On Wednesday, Devin Levine from the Cox Business Convention Center shared how he makes a Beef Tenderloin Carpaccio.
Ingredients
- 6 oz. tenderloin, sliced thin
- 2 tabl Olive Oil
- 1 tabl Dijon Mustard
- 1 Tabl Capers
- 1 Tabl Red Onion
- 1/4 teaspoon Maldon Sea Salt
- 1/4 Teas Cracked Black Pepper
- 1 Teas Parsley
- 2 Tabl Shaved Parmesan
- 1 cup Arugula
- 6 pieces of sliced Baguettes
- 4 lemon wedge pieces
Instructions
- Step 1: Lay out piece of plastic wrap; place thin slices of tenderloin and cover with another piece of plastic wrap.
- Step 2: Using a meat mallet, pound tenderloin out until paper thin;
- Step 3: remove top plastic and turn meat out onto plate and peel off remaining plastic.
- Step 4: Brush with olive oil and sprinkle all remaining ingredients overall and garnish with drizzle of Dijon & arugula
- Step 5: Serve with thin sliced baguettes
