It is a busy season for Oklahoma pecan producers.
The harvest has begun and the holidays are quickly approaching.
Knight Pecan Farms has opened its store in Tulsa for people to shop from their locally grown pecans.
Bob Knight started the business in 1986.
"The Arkansas River flooded in '86 and we were out looking at pecan groves at that time and this was the only grove that was not flooded," he said.
A decision that has served his family well, especially this year.
"The last two weeks we have had 11 inches of rain, and the farm has drained fine and we are going to be able to get back to harvesting," said Knight.
He works on the farm with his son, shaking the trees until pecans fall out. Each one produces several hundred pounds of pecans.
"We just sweep them up, put them in big trailers, and there is a process to clean the pecans to get the trash out that the harvester picks up," Knight continued saying, "Then we dry them and send them to a place to be shelled."
Every step along the way making sure to keep the quality intact.
"Pecans you get in the grocery stores tend to be a little bit rancid because they do not store them properly," Knight said. "So, we send fresh pecans all over the country and there is a big difference. The freshly grown, local pecans taste better."
