Description
This week I am going to show how to cook beet greens. Many people throw away the leaves and stems of vegetables that they buy in the grocery stores not realizing that these greens are not only edible but are nutritious and delicious. This simple recipe is one of my favorites and could very easily become one of your favorite recipes.
Ingredients
- 1 bunch red beets with leaves and stems
- 2 tablespoons extra virgin olive oil
- 2 tablespoons Eden Mirin (rice cooking wine)
- Salt and pepper to taste
Instructions
- Step 1: Cut the stems off the beets leaving 1 inch of stems on the beets. Reserve the beets for other recipes. Rinse with cool water and make sure to scrub off all the dirt and grit. Cut the leaves off from the stems. Set aside.
- Step 2: Chop the stems into 1-inch pieces. Chop the leaves to your preference-coarse, medium, or fine. In a medium to large skillet add the olive oil and heat on medium. Add the stems to the pan and sauté for 2 to 4 minutes stirring constantly. Add the leaves, Mirin, salt, and pepper. Stir until leaves are wilted. Serve and enjoy.
