Cajun Foil Pack

Description

It's that time of year to fire up the grill and get ready to cook out. Chef, author, and influencer Emily Susman is back again to show us some simple ideas for Italian and Cajun foil packs.


Ingredients

  • 1 lb shrimp, peeled & deveined
  • 1 smoked sausage or turkey link
  • 2 corn, cut in half & par-cooked
  • 1 lb potatoes, par-cooked (red or golden)
  • 6 tablespoons butter, melted
  • 1/2 cup chicken or seafood stock
  • 2 tbsp Tony C Cajun seasoning or Old Bay
  • Parsley & lemon juice, optional

Instructions

  1. Step 1: Preheat oven or grill to 450 degrees.
  2. Step 2: Lay out foil and build the packets. Use half of the ingredients in each packet. Wrap the packets up tight so the liquid doesn't leak. I usually double wrap in foil.
  3. Step 3: Cook at 450° for 26 minutes and enjoy!

Italian Foil Pack

Ingredients

  • 1/4 cup evoo
  • 1/3 cup white wine vinegar
  • 1 tsp minced garlic
  • 1 tsp salt
  • 1/2 tsp dry mustard
  • 1/2 tsp paprika
  • 1 tbsp Italian herbs
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 onion, sliced
  • 1 small bag of baby red potatoes, par-cooked
  • 1 lb Italian sausage, sliced into 2" pieces

Instructions

  1. Step 1: Preheat oven or grill to 450 degrees.
  2. Step 2: In a bowl, mix together the garlic, spices, evoo, & vinegar.
  3. Step 3: Stir in the rest of the ingredients.
  4. Step 4: Lay out foil on a cookie sheet and pour everything onto the foil. Wrap the packets up tight so the liquid doesn't leak. I usually double wrap in foil.
  5. Step 5: Cook at 450° for 25 minutes and enjoy!
