We're happy to welcome back Devin Levine with the Arvest Convention Center doing Spanish Coddled Eggs
Ingredients
- 4 Eggs
- 1 tabl Butter, softened
- 4 oz Chorizo, cooked
- 2 tabl Diced Red Pepper
- 2 tabl Scallions, minced
- 2 tabl Manchego, grated
- 2 tabl Heavy cream
- Salt, pepper to taste
- Toast Points
Instructions
- Step 1: Butter two ramekins or small cups; portion the chorizo, red peppers & scallions in the bottom of the cups; crack two eggs into each cup.
- Step 2: Drizzle the heavy cream on top, sprinkle grated Manchego and season with salt & pepper.
- Step 3: Please in bain-marie with water coming up halfway to the cup.
- Step 4: Cover and place over the medium. Heat and lightly steam for 10-15 minutes or until the eggs are slightly firm. Remove and serve with buttered toast points.
