Description
This delightful breakfast is a total explosion of flavors and a perfect way to start the day. Even Keto lovers will enjoy the flavors of the meats, cheese, and zucchini. It is ideal to share with family and friends.
Ingredients
- 1 ea. medium zucchini
- 1/2 cup. parmesan shredded cheese
- 1/2 cup mild cheddar shredded cheese
- 1/3 cup ground beef chorizo
- 1/3 cup diced ham
- 1/3 cup diced sausages
- 1/3 cup red & green bell peppers
- 1/3 cup diced onion
- 3 ea. whole eggs
- FOR CHIMICHURRI - 1 ea. poblano pepper
- 3 ea. fresh jalapenos
- ½ bunch of cilantro
- 2 lemons (juice only)
- ½ bunch of parsley
- ½ cup water
- Salt and pepper to taste
Instructions
- Step 1: After you wash the zucchini, cut the two ends. By using a peeler, shave the zucchini lengthwise. You will need only 10 each for this dish
- Step 2: On a small sheet pan, add parchment paper and sprinkle ½ of the two cheeses in the tray, and add the zucchini slices overlapping on top of the cheese, and spread the other half of cheese on top lightly to cover the top of the zucchini.
- Step 3: Set your oven to 300 degrees and bake for 10 minutes. When cooking zucchini, gather all items to make the three-meat filling. In a skillet with medium heat on the stove top, add butter to melt, add onion and bell peppers, and sauté for two minutes. Add the meat and mix well for at least one minute. Crack the three eggs in a small bowl and whisk. Add it to the vegetable mix in the skillet. Mix occasionally and mix well as you cook for the best results
- Step 4: When the egg mix is finished, it’s time to assemble and plate. Using the tray with the zucchini and cheese, slowly separate the melted cheese and zucchini from the cooking paper and lay it on a cutting board. Next, add all the egg and meat mixture right in the center and roll it nice and firm. Cut the wells to a 2” length and set them up in the plate. Decorated by adding your fried onions, sour cream, and chimichurri.
