Curried Chicken With Roti Trini Style
1 whole chicken/ chicken breast cut in pieces
2 3 garlic minced
3 2 tbsp of all natural herbs
4 1 tsp salt or to taste
5 2 tsp of olive/ vegetable
6 3-4 tsp of curry powder
7 ½ cup chop tomatoes
8 ½ cup onion
9 1 cup water
10 ½ cup of coconut milk/ yogurt
11 Salt and pepper to taste
12 Add herbs, onion, salt and pepper, curry and garlic to chicken mix together
13 Method heat pot to 350 add oil and garlic until garlic medium brown, add chicken stir
14 Add tomatoes coconut milk/ yogurt stir.
15 Add water, let cook for 30 minutes or until chicken is tender.
Channa / {Chick pea} and potatoes curried
1 3 potatoes diced
2 1cup chickpea
3 ½ onion minced
4 2 garlic clove minced
5 1 tsp curry powder
6 Salt and pepper to taste
7 1 cup water
8 1 tbsp of cilantro for garnish
9 Method heat pot 350 add oil, garlic, onion, and curry powder stir
10 Add potatoes chickpea water, salt and pepper taste cook for 15 to 20 minutes or until soft
11 Garnish with cilantro.
Roti Bread
1 4 cups flour
2 4 tsp baking powder
3 1 tsp salt
4 1 ½ water (approx.)
5 1 ½ oz. or 3 tbsp of softened butter
6 ¼ cup veggie oil for coating
7 Add all ingredient together mix then let stand.
Serve all together.
