Description
One of Sassy Mama's kid friendly recipes, this tater tot taco casserole is great for all ages.
Ingredients
- 1 lb ground beef (venison or bison can be used)
- 1 small onion, finely diced
- 1 clove garlic, minced
- 1 red bell pepper, chopped
- 1 (4 oz) can diced green chiles
- 1 (1 oz) package taco seasoning mix
- 1 (15 oz) can black beans, rinsed and drained
- 1 (12 oz) package roasted frozen corn
- 3 cups shredded Mexican blend cheese
- 1 (28 oz) package frozen tater tots
- 1 (10 oz) can red enchilada sauce
- Olives
- Cilantro
- Sour Cream
- Tomatoes
Instructions
- Prep: Preheat oven to 375 degrees. Spray a 9x13 pan with cooking spray.
- Cook: In a large skillet, sauté onions and bell pepper with ground beef. Once the ground beef is browned, sprinkle taco seasoning and 1/4 cup of water. Stir in corn, green chilies, and black beans. Add 2 cups of cheese and transfer the mixture to the prepared 9x13 baking pan.
- Arrange: Arrange tater tots on top in rows until completely covered. Pour red enchilada sauce over the tots.
- Bake: Bake uncovered in the oven for 40 minutes. Sprinkle remaining cheese over the top when there are 5 minutes remaining. Return the casserole to the oven for an additional five minutes, then remove.
- Serve: Serve with your favorite taco toppings, such as olives, cilantro, sour cream, and tomatoes.
