Welcome to the Cooking Corner. We're happy to welcome back Chef Scott Van Tuyl from Prossimo doing a Spicy Paccheri Alla Vodka
Ingredients
- 6oz. Cooked Paccheri Pasta
- 1oz........Olive Oil
- 1oz. Shallots, Sliced
- 1⁄2 oz. Sliced Garlic
- 1⁄2 tsp. Crushed Red Pepper Flakes
- 1/4 tsp. Black Pepper
- 1⁄2 tsp. Salt
- 1 oz Vodka
- 4oz. San Marzano Tomato Puree
- 4oz. Heavy Cream
- 2oz. Butter
Instructions
- Step 1: Saute shallots, garlic, red pepper flakes, black pepper, and salt for one minute over medium heat.
- Step 2: Deglaze the pan with vodka and burn off the alcohol.
- Step 3: Add the tomato puree and cream.
- Step 4: Reduce by half (cook until sauce turns orange)
- Step 5: Add the hot pasta and butter.
- Step 6: Stir until butter is melted and serve immediately.
