Welcome to the Cooking Corner. We're happy to welcome back Chef Devin Levine from the Cox Business Convention Center doing a Spring Time Arugula Salad.
Ingredients
- 1 LBS FRESH ARUGULA
- 6 OZ CANDIED WALNUTS
- 6 OZ DRIED CRANBERRIES
- 2 CUPS STRAWBERRIES, SLICED
- 1 CUP BLUEBERRIES
- 1 CUP GOAT CHEESE, CRUMBLED
- 1/2 CUP SHAVED PARMESAN
- The Dressing: 1 CUP POMACE OLIVE OIL 1/2 CUP WHITE BALSAMIC VINEGAR 1/2 CUP HONEY 2 TABL DIJON MUSTARD 1 TABL DRIED TARRAGON 1 TABL SUGAR SALT & PEPPER TO TASTE
Instructions
- Step 1: Combine all ingredients for dressing in mixing bowl and whisk to emulsify.
- Step 2: Gather all ingredients except for salad in large separate bowl. Tossed with prepared dressing and portion into six entrée bowls.
- Step 3: Garnish with additional crumbled goat cheese.
