Welcome to the Cooking Corner. We're happy to welcome back Chef Devin Levine from the Cox Business Convention Center doing a Spring Time Arugula Salad.


Ingredients

  • 1 LBS FRESH ARUGULA
  • 6 OZ CANDIED WALNUTS
  • 6 OZ DRIED CRANBERRIES
  • 2 CUPS STRAWBERRIES, SLICED
  • 1 CUP BLUEBERRIES
  • 1 CUP GOAT CHEESE, CRUMBLED
  • 1/2 CUP SHAVED PARMESAN
  • The Dressing: 1 CUP POMACE OLIVE OIL 1/2 CUP WHITE BALSAMIC VINEGAR 1/2 CUP HONEY 2 TABL DIJON MUSTARD 1 TABL DRIED TARRAGON 1 TABL SUGAR SALT & PEPPER TO TASTE

Instructions

  1. Step 1: Combine all ingredients for dressing in mixing bowl and whisk to emulsify.
  2. Step 2: Gather all ingredients except for salad in large separate bowl. Tossed with prepared dressing and portion into six entrée bowls.
  3. Step 3: Garnish with additional crumbled goat cheese.
