Description
This delicious recipe makes a wonderful side dish, or a healthy snack loaded with nutrients and fiber. The black beans contain 15 grams of protein, 15 grams of fiber, vitamin A, several B vitamins, and lots of magnesium and potassium. Quinoa is an ancient grain that comes from South America. Called Warrior Food, this grain is loaded with vitamins and minerals and is a good source of protein and fiber. Quinoa has a pleasing nutty flavor that is terrific to add to recipes or can be eaten plain as a cereal. This recipe is sure to be a hit with the whole family.
Ingredients
- ½ cup quinoa
- 1 cup fresh or frozen sweet corn
- 2 scallions, chopped
- 1 cup water
- ½ cup chopped tomatoes
- ½ cup chopped celery
- ½ cup chopped red bell pepper
- ½ cup diced red onion
- 1 can black beans, drained and rinsed
- ⅓ cup chopped cilantro
- Dressing: 2 tbsp. extra virgin olive oil ½ tbs. lemon juice or red wine vinegar 1 clove garlic, minced salt and pepper to taste
Instructions
- Step 1: Soak quinoa for 5 minutes, then drain. Cook in 1 cup water for approximately 15 minutes. In the last 5 minutes, put in the corn if frozen. Drain and cool.
- Step 2: Mix the remaining ingredients in a bowl and pour the dressing in and mix well. This salad keeps well in the refrigerator for several days. Substitutions can be made for the vegetables, grated carrots, diced zucchini, chopped asparagus or whatever you like.
