Chef Alfredo Vargas shared a simple, but perfect recipe for Valentine’s Day, a special occasion or to impress friends, family, or a loved one in your life. This bruschetta has the perfect balance of crispiness and fresh ingredients like cucumber, cherry tomatoes, basil, and fresh mozzarella with a touch of extra virgin olive oil.
Ingredients
- 3 slices of whole grain bread
- 14 ea. cherry tomatoes
- 8 ea. basil leaves
- 10 ea. balls cut in ½ fresh mozzarella cheese
- 1 medium cucumber
- ½ cup extra virgin olive oil
- 2 tbs. salt
- 1 tbs. black coarse pepper
- ½ cup shredded parmesan cheese
- ½ cup unsalted butter
- 2 oz. boursin cheese
Instructions
- Prep: In a small bowl, add the cut tomatoes, cucumbers in heart shape, fresh mozzarella also cut on heart shape, and finely chopped basil.
- Refrigerate: Add the extra virgin olive oil, salt & pepper and mix well. Cover and refrigerate for 10 minutes
- Bake: With a heart-shaped cookie cutter, cut three heart shapes from each slice of bread respectively, from the center. Brush with melted butter on both sides, and sprinkle with shredded parmesan cheese to cover one side. Put in a pan and bake for five minutes at 300 degrees until cheese is melted into the bread.
- Garnish: Spread boursin cheese on each slice and top with the previous tomato & mozzarella salad mixture and garnish your plate with a small rosette.
