Description
It's springtime, and it's a perfect time for a healthy lunch on the patio. Saint Francis Outpatient Dietitian Megan Walters is joining the program for the first time today and has a delicious salad recipe for us.
Ingredients
- ¾ cup raw walnuts
- ½ small red onion, thinly sliced
- 10 ounces fresh baby spinach
- 1 quart strawberries hulled and quartered (about 1 pound)
- ½ cup crumbled feta cheese
- ¼ cup balsamic vinegar
- 3 tablespoons extra-virgin olive oil
- 1 ½ tablespoons poppy seeds
- 1 ½ tablespoons honey
- ½ teaspoon Dijon mustard
- ½ teaspoon kosher salt
- ⅛ teaspoon ground black pepper
Instructions
- Step 1: For the salad, mix the walnuts, onion, baby spinach, strawberries and feta cheese together.
- Step 2: For the dressing, mix the vinegar, olive oil, poppy seeds, honey, mustard, salt and pepper together.
