We may be approaching the end of grilling season, but there's still plenty of time. Our friend Jeff Tracy the Cowboy Cook shows us how to do a Grilled Grilled Cheese.
For the Grilled Cheese
8oz of thinly sliced ham
8oz shredded Provolone
8oz shredded sharp Cheddar
8 slices of sourdough bread
½ cup mayo
For the Pineapple Bacon Jam
1 lb. bacon cut into ¼” pieces
4 shallots thinly sliced
8oz crushed pineapple
½ cup light brown sugar
1/3 cup apple cider vinegar
½ tsp red pepper flakes.
Directions
In a medium saucepan cook the bacon until crisp, stirring regularly, takes about 10 minutes. Spoon off the crisp bacon and add the shallots
to the bacon fat. Cook the shallots until softened, about 4 minutes. Then add the brown sugar, pineapple, apple cider vinegar and pepper flakes.
Cook the mixture until it reduces and the shallots and pineapple are browned and the mixture becomes, jammy. Takes about 10 minutes. Add the bacon and stir then remove from the heat and set aside.
Heat your grill to medium heat and two zones. Grill the ham for 2 minutes until heated all the way through.
Build your sandwich by layering the bacon jam, ham, and cheeses on sourdough. Coat the outside of the sandwich with mayo.
Grill your sandwich directly over the heat on the grill. Feel free to move the sandwich around and over to the indirect side until the bread is golden brown and the cheeses have melted.
This recipe will make 4 sandwiches.
