Welcome to the Cooking Corner. Casey Finau with Panera is here showing us how to do Chorizo Mac and Cheese
Ingredients
- 4 oz. chorizo, diced
- 1/3 cup red bell pepper, diced
- 1/3 cup canned black beans, rinsed and drained
- 1/3 cup frozen corn
- 16 oz. Panera® Mac & Cheese
- Salt and black pepper
- 1 tbsp. pickled jalapeno peppers, chopped (optional)
Instructions
- Step 1: In medium skillet, cook chorizo for 2-3 minutes over medium-high heat. Add red bell pepper and sauté for another 2 minutes. Add black beans, corn, and jalapenos. Cook for 1 minute or until heated through.
- Step 2: Add Mac & Cheese and toss to combine. Simmer for 2 minutes to allow flavors to combine. Season to taste with salt and pepper.
