Black-Eyed Pea Salad

Description

Ingredients

  • 1 15 oz can black eyed peas, drained and rinsed
  • 1 red bell pepper, chopped
  • 2 large celery ribs, cut ino 1/4-inch dice
  • 4 large green onions
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tsp garlic powder
  • 2 tbsp white sugar
  • 2 tbsp apple cider vinegar
  • salt and pepper for taste
  • Tabasco sauce, optional

Instructions

  1. Step 1: In a small bowl, combine mayonnaise, Dijon, garlic powder and sugar and mix well. Whisk in vinegar until smooth.
  2. Step 2: In a medium sized bowl, combine the black-eyed peas, bell pepper, celery and green onions. Pour dressing over and fold gently.
  3. Step 3: Season to taste with salt and pepper. Add Tabasco, as desired.
