Ingredients
- 1 15 oz can black eyed peas, drained and rinsed
- 1 red bell pepper, chopped
- 2 large celery ribs, cut ino 1/4-inch dice
- 4 large green onions
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 2 tsp garlic powder
- 2 tbsp white sugar
- 2 tbsp apple cider vinegar
- salt and pepper for taste
- Tabasco sauce, optional
Instructions
- Step 1: In a small bowl, combine mayonnaise, Dijon, garlic powder and sugar and mix well. Whisk in vinegar until smooth.
- Step 2: In a medium sized bowl, combine the black-eyed peas, bell pepper, celery and green onions. Pour dressing over and fold gently.
- Step 3: Season to taste with salt and pepper. Add Tabasco, as desired.
