- Pork tenderloin
- Fresh strawberries (sliced)
- Red wine
- Balsamic glaze
- Sugar
- Olive oil
- Lemon juice
- Fresh rosemary
- Shallots (chopped)
- Garlic (minced)
Instructions
- Step 1: Make the Marinade - In a bowl, combine red wine, balsamic glaze, sugar, olive oil, lemon juice, chopped rosemary, shallots, and garlic.
- Step 2: Marinate the Pork - Place pork tenderloin in a dish or bag with most of the marinade (reserve some for glaze). Let sit at least 1 hour, ideally overnight.
- Step 3: Cook the Pork - Roast in the oven at 350°F for about 1 hour, or smoke at 250°F for 2 hours. Cook until internal temperature reaches 145°F.
- Step 4: Make the Glaze - While the pork cooks, heat the reserved marinade in a pan. Simmer and reduce it slowly, then stir in sliced strawberries to create a thick glaze.
- Step 5: Serve - Slice the pork and serve with the strawberry glaze on top or on the side.
